[Peugeot-L] 504 diesel

I'm p/u a 1979 504 diesel this weekend from my old man. Free no less. Anyway, it has been sitting for about 15 years (no wonder it's free!) and I want some advice on what steps to take BEFORE i attempt to start it. It's been in a garage in Phoeniz, Az. (e.g. High summer heat) so I assume it will need standard hose, belt, tire etc. replacement due to dry rot. However, after I do those sorts of change-outs, what would you propose I do next? Fuel lines will eventually be changed for WVO/SVO conversion, but what about head gaskets, valve cover gaskets, oil pan gaskets, etc.? What about ALL the fluids including rear-end, tranny, and other "sealed" fluids? What I don't want to do is start the thing and blow the engine before I even get a chance to run the thing. I'm stoked about it, but have all the time in the world to do it right, BEFORE I start it.
