Peugeot's instructions call for removing the swirl chambers and machining the backs of them on two planes to match the amount removed from the head. Milling machines tend to catch on the swirl chambers and chatter, ruining the cut. Head grinders on the other hand seem to do just fine, with just a little inconsequential smearing at the joints. Minimum head thickness I believe, is 89.35mm. Correct valve recession from the face of the head should be maintained by grinding the valves.

BTW, there are several head gasket thicknesses. The correct thickness is determined by the piston standout above the block, not by the thickness of the head. About 90% of engines take the 2-notch gasket, but most gaskets sold are 3-notch, so there are a lot of engines out there with too thick a gasket and the consequent poor efficiency. So don't replace a 3-notch with a 3-notch unless the piston standout requires it.

Also, be sure to replace the headbolts with TTY bolts if your old ones are threaded less than half way up.
