There is a measurement in the manual
It is the travel that the pedal goes thru
from where it sits normally to fully depressed on the floor
and that is about 140 mm
The more you screw the adjustment nuts toward the front of the car
the higher the pedal and the more travel is possible
There are 2 problems
- If the pedal doesn't travel enough the gears will clash especially reverse
if you can get into reverse without clashing then you have enough travel
- If the pedal travels too far the diaphram spring in the pressure plate will over flex
and this can weaken or even crack the spring.
My 356 Porsche had a clutch pedal stop to keep the pedal from going too far.
The adjustment technique was to have just enough travel to keep from clashing reverse
I think the 91 and after are somewhat different measurement

What I do is adjust it until it feels right, engaging fully in the
middle of the range of pedal travel. I haven't had to adjust my
clutch for the last 150,000 km though...
