The fan should come on before the gauge reaches the red zone.
To check the switch
Put the switch in a pot of water with a ohm meter connected to each
terminals. Heat on your stove or hot plate if the wife objects. The
switch should close around 90-95 degrees C and before the water comes
to a boil..
