The resistance should increase somewhat like that. I would expect
that the resistance should not decrease between two points (where
point one is less open than point two), unless the AFM is dirty or
otherwise worn out.
I also suspect that the Jetronic/Motronic ECU won't respond fast
enough to the blips, will average out the readings, or otherwise
compensates for the scattered resistance readings.
Also, worth keeping in mind, the quality of your multimeter will be
important too. Most digital ones average things pretty slowly,
resulting in some wacky readings if you're trying to check something
that changes quickly (like an oxygen sensor).
