The connections to the sensor are prone to rotting out but in this case as the system has been flushed it seems more likely to be the sensor. Had to change it on my 405.
If memory serves me correctly unplug the wires, have the new one ready to go in pop the old one out and new one straight in and there is no need to drain the system. It is a bayonet fit like a light bulb.
Can not remember which supplier I used either
www.eurocarparts.co.uk
or

Subject: 405 coolant light on at start up but goes out after several minutes
Hi gang,
One last little electrical bug...the low coolant light
is on when I start the car from cold, or after it's
been sitting. However, my mechanic just flushed the
system and completely refilled it.
I assume it's the coolant level sensor that is
malfunctioning? Anything else I should look out for??
Cheers,
Paul Hughes
